The word asparagus (from the Latin) sparagus derives in turn from the Greek aspharagos or asparagos and the Greek term originated from the Persian asparag meaning "shoot". It has been used since ancient times as a culinary vegetable, due to its delicate flavor and diuretic properties. There is a recipe for cooking asparagus in the oldest surviving recipe book, De re coquinaria, book III, written by Apicius in the 3rd century.
